    小试西点

     

    Spaces无法更新的日子里,趴在Windows live窗口上,眺望着海外同胞自由自在的身影,心里莫名其妙

     

    上不了空间,咱就下厨房。第一次尝试做西点,找了一款不需要用烤箱的芝士蛋糕配方,小心翼翼地按步骤操作。

     

    冻柠檬芝士蛋糕

     

     

     

    准备材料:

        奶油奶酪(cream cheese)250克、鲜牛奶50ML、淡奶油125ML、细砂糖50克、鱼胶粉10克、蛋黄一只、柠檬1/2只、可可粉适量。因为没有烤箱,饼底我是用西点屋买来的清水蛋糕替代的。

     

    制作过程:

    1、准备了6寸的心型活底慕司圈,将买来的清水蛋糕批成薄片,并刻成心形铺在慕司圈底部;

    2、 奶油奶酪提前从冰箱中取出,切成小块装在容器中,让其在常温中自然软化;

    3、将鲜牛奶加入盛有奶油奶酪的容器中,隔水(水温在60°左右)加温搅拌,并分次加入30克细砂糖;搅拌至糖全部融化、无颗粒、细腻的糊状;

    4、将盛有奶油奶酪的容器从热水中取出,加入一只蛋黄,搅拌均匀;

    5、提前将鱼胶粉放入小碗中,用5倍的冷水浸泡,至鱼胶粉完全吸收水分,变成半固体状态,隔水加热,搅拌至融化;

    6、柠檬榨汁,滤去籽和渣,加入融化的鱼胶汁拌匀,然后再加入搅拌好的奶酪糊中,混合均匀;

    7、淡奶油倒入无油无水的容器中,加入剩余的砂糖,保持同一个方向搅拌打发,大约至7分发即可;

    8、将打发的鲜奶油和奶酪糊混合均匀,倒入慕司圈内,盖上保鲜膜,放入冰箱冷藏室3至4小时;

    9、取出后,用电吹风在慕斯圈外围吹几下,就能顺利脱模了。洒上可可粉,用水果装饰一下,大功告成。

     

    在等待的过程中,心里总有一些忐忑。毕竟是第一次做蛋糕,一切都很生疏,心里一点把握都没有,只是按部就班的仿效。直到大家品尝后一致认为“真不错!很正点!”时,我才顾得上狠狠地开心一下。

     

    总觉得做馒头、糕点、尤其西点是件很复杂的事。仅准备材料、工具,就挺麻烦的;单单是粉类,就分什么低筋、中筋、高筋,还有很多需要添加的诸如泡打粉、塔塔粉、鱼胶粉每一样材料都需要精确地量化,光看配方就把我吓住了。这次小小的成功,可能会促使我继续尝试。呵呵~

     

    上周末,家里做面点时多了一些发面,我用黄油代替食用油,用玫瑰花瓣代替葱花,做了8个迷你版的小花卷;出笼时,我弟妹喜欢得惊叫起来。这漂亮的小点心又让我跃跃欲试,哪天等我自己学会了发面,一定要再做一次。
