    学厨之四

    冰淇淋

            在我的想象中,制作冰淇淋一定很复杂。  

     

    无意中在网上发现这款无奶油芒果冰淇淋的制作却是出乎意料的简单,从准备原料到制作过程完全适合家庭操作,于是兴奋地动手尝试起来。

    我知道自己挺烦人的,差不多天天缠着阿姨、老爸他们教我学做新菜。自从喜欢上学厨之后,一家人都有了不可推卸的品尝责任;我每学做一道菜,都要让大家为我点评,这样进步才快嘛至少先要适合家人的口味对吧~

     

    闲时也会上网去搜搜,看到简单易学的就拿来试做一下。这款冰淇淋基本上算是成功的,就是质感还不够细腻,下次再改进一下。不过吃在嘴里芒果味特别浓,还有点嗑嚓嗑嚓的冰沙感,大家都觉得比传统的冰淇淋更清爽、不甜腻;就是挖起来不太容易,吃的时候要在常温下放一会儿,让它回软了才行。

     

     

     

     更新:第二次做的时候增加了两个鸡蛋,将蛋白和蛋黄分离;蛋黄加入芒果、牛奶中一起搅拌成泥(图中第三步),蛋白按一个方向打至发泡不滴落;随后将打发的蛋白与芒果泥拌匀后放入冰箱(图中第四步)。改进后的口感更加细腻、绵软。还有一个小小提示,中途拿出来的时候要顺着一个方向搅拌透,使其中的气泡减少;也可以分装在一次性纸杯里,吃的时候很方便,就像冰淇淋店里的品脱杯。

    Evaporated Milk不要煮,它容易糊,微波炉叮加热为好。
    我是往猕猴桃里加了糖的,但口感较淡。
    Evaporated Milk颜色偏黄,我想配黄色的水果,如芒果、桃。。。可能更好。你说呢?
